This recipe is a nutritious and fibre-rich spin on classic overnight oats. It's raw, can be vegan and is almost gluten-free (oats can contain small or trace amounts of gluten). It's a simple meal prep breakfast idea that can be made up the night before to make mornings that much easier.
Making overnight oats rather than cooking up porridge preserves all the goodness of the ingredients. We hope you'll give it a try and let us know if you feel lighter and more energetic!
1/2 cup quick oats
1/2 banana, mashed, (or grated apple)
1 Tablespoon VIBERI Blackcurrant Powder
1 Tablespoon of protein powder of choice - I used whey
1/2 cup of milk of choice - I used unsweetened almond milk
Dash of pure vanilla essence
- Add all ingredients apart from the banana (or apple) and leave to sit in the fridge overnight.
- In the morning (or after 10 hours) fold in the fresh fruit and serve!

Whole nuts and/or seeds
Nut and/or seed butters
