Whoever said you shouldn't have cake for breakfast? Baked Oats are a comforting, warming and delicious winter breakfast that essentially tastes like cake but is a dairy and refined sugar free option! We usually bake ours in a ramekin but you could absolutely bake it in a muffin tin so you can enjoy it on-the-go.
We have written our recipe to serve 2, but you can multiply the mixture as needed and also add any additional flavours you please.
We like to serve ours with Raglan Blackcurrant and Vanilla Coconut Yogurt - made using ViBERi organic blackcurrants!
Prep time: 5 mins | Cook time: 20-25 mins
100g Rolled Oats
1t Baking Powder
1 medium-large Banana
1T honey or maple syrup (you can use any type of sweetener)
Combine all ingredients in a Nutribullet or any type of blender. Once blended, fold through frozen ViBERi Blackcurrant/SuperBeri mix.
Grease your ramekins/muffin tins and pour the mixture in. Sprinkle some more ViBERi Blackcurrants and oats on top. Let sit for 10 mins before baking at 180 degrees for 20-25 minutes.
